Led by Chef Nicola Sanna, Our head butcher, the team combines time-honoured Italian methods with modern precision. Each product reflects patience, expertise, and a commitment to quality you can taste. From locally sourced beef and lamb to house-made sausages and handcrafted salumi, every cut is handled with care and respect for its craft.
Our selection includes dry-aged and wet-aged steaks, ribeye, New York strip, and Ontario lamb, as well as an ever-changing variety of sausages and seasonal specialties. Many of these same cuts and cured meats are used in our restaurant and available daily in the Mercato.
Guests are welcome to visit in person to browse the full selection or call ahead to place an order and skip the wait.
