Cacciatore means “hunter” in Italian and the story goes that hunters carried this dried sausage as a snack on long hunting trips. Our wild boar cacciatore is made in house in the classic Italian tradition and is aged for 50 days. It is simply seasoned with sea salt and Chef Paganelli’s signature blend of spices.
Our wild boar is raised with love by Chef Gabriele Paganelli on his farm in Elmvale, Ontario. He has been involved with the breeding of his herd for the past 20 years. His wild boar are free to roam and feed on an all natural diet, free of hormones and antibiotics.
Our wild boar cacciatore is dairy free and gluten free.
