Our water buffalo bresaola is simply seasoned with sea salt and Chef Paganelli’s signature blend of spices. It is then air-dried, and aged in house for three months until it becomes hard and turns a dark red, almost purple color.
Water buffalo bresaola differs from beef in that it has a more delicate, tender, and chewy consistency. We source our water buffalo from Belville, Ontario where they are free to roam and are given natural feed without antibiotics, hormones or growth stimulants.
Our water buffalo bresaola is dairy free and gluten free. A whole bresaola is 600-700g.
