Ubriaco Rosso is made from cow’s milk in Veneto, Italy. Ubriaco means drunk in Italian, and it is so called because the cheese is immersed for approximately 2 months in turns full of red wine. It is then enclosed in linoleum towels and aged from 6-10months. This gives it a unique reddish-purple coloured rind and soft inside.
