Our porchetta is seasoned with Chef Gabriele Paganelli’s signature spice rub imparting the essence of rosemary and other various Mediterranean herbs. It is then slow cooked for two and a half hours and then roasted for 30 minutes to achieve a crispy skin.
We use pork raised by Mennonite farmers and fed a natural diet without antibiotics or hormones. Our pork is sourced from Bachert Meats in Walton, Ontario.
