Fassona is a breed of cow native to the Piemonte region of Northern Italy. The cattle are 100% grass fed, yielding meat that has little connective tissue and fat, resulting in a product that is leaner and more tender than the average cow. Perfect for raw preparations such as tartar and carpaccio.
Minimal marinating is required before grilling, making it perfect for a quick sear on high heat. Finish with a sprinkle of our Salamoia Bolognese, as usual.
