Translation: Sheep’s Milk Cheese, from Rome

Description: Hard, sheep’s milk cheese. The recipe hasn’t changed in at least a millenia: Pecorino Romano was a staple in the diet of the legionaries of ancient Rome.

The DOP designation ensures premium quality and authenticity, look for the yellow and red symbol to be sure!  

Aged:  Minimum 12 months    

Aroma: Earthy, Rich

Flavour: Salt forward and assertive! Though it may look approachable and pleasant, Pecorino Romano is not meant to stand alone. Grate over or into recipes that can withstand a salty punch. Think: Rich carbonara or Amatriciana sauces or bitter greens.

Pairs perfectly with freshly ground black peppercorns (obvs) and can be used as a garnish for many bar snacks, like warm nuts, chips, and popcorn.
