The origins of this sheep’s milk cheese lie in the Roman countryside although today’s production is mainly in Sardinia. Its DOP (denomination of protected origin) status, awarded in 1955, is one of the oldest in Italy.
Pecorino Romano is widely known as a cheese to be grated and can be ripened over long periods of time thanks to the high level of salt. It is also excellent as a table cheese.
