This is a very soft and delicate cheese made from pasteurized sheep’s milk from Pienza in Italy.
It is aged for approximately 30 days. Pecorino nel Fieno(‘fieno’ means ‘hay’ in Italian), is pale in colour, and lightly pinstriped when cut. The taste is buttery with a hint of freshly harvested hay. The rind is almost undetectable.
