This is an Italian sheep’s milk cheese from Sicily. Pecorino Moliterno al Tartufo has wide, deep veins of black truffle streaked throughout its ivory base.
During the 120-150 day maturation period, the wheels are rubbed with vinegar and local olive oil. The characteristic notes of black truffle enhance and balance the rich earthy notes of the sheep’s milk. It is aged between 120-150 days.
