Pecorino Moliterno is an Italian sheep’s milk cheese from Sicily. During the 120-150 day maturation period, the wheels are rubbed with vinegar and local olive oil. These flavours spread throughout the cheese, resulting in a rich, earthy flavour.
Pecorino Moliterno al Tartufo has wide, deep veins of black truffle streaked throughout its ivory base. This effect is achieved by using a syringe to inject the black truffle paste. The classic notes of truffle enhance the rich, earthy flavour of the Moliterno. It is aged between 120-150 days.
