Gorgonzola Dolce or sweet gorgonzola (dolce means sweet in Italian) was created after World War II and very quickly rose to popularity, becoming the better-known variety of this cheese.

Compared to regular gorgonzola, the greater whey content makes sweet gorgonzola softer and more delicate in taste. Gorgonzola Dolce is ripened for a period of at least 60 days resulting in a soft, yellow paste and bluish-green marbling.
