ORIGIN:  Valli Trapanesi in the province of Trapani, Sicily

IDEAL USE:  Excellent for seasoning fish dishes, vegetables or cheeses. Also used for pastries and cakes as an excellent substitute for butter or seed oil.

COLOUR: Green or straw yellow with golden nuances.

PERFUME and TASTE: Buttery, sweetly fruity, very aromatic and slightly spicy…low acidity high polyphenols.

COLD EXTRACTION: Continuous-cycle extraction system…within 24 hours of harvest…bottled unfiltered
