ORIGIN:  Valli Trapanesi in the province of Trapani, Sicily

IDEAL USE:  It is savoury, indicated for a raw use especially on fresh vegetables, grilled meat and fish, vegetable soups.

COLOUR: From yellow to intense green

PERFUME and TASTE: Olive with tones of artichoke, almond green tomato and cut grass. Medium fruity, bitter and slightly spicy with a hint of sweetness…low acidity high polyphenols.
