IDEAL USE:  It is widely used to season both raw and cooked foods: meat dishes, both boiled and grilled, or soups and salads

COLOUR: From yellow to green

PERFUME and TASTE: Olive with tones of fresh grass, artichoke, tomato and thistle. Medium fruity, bitter and spicy with a hint of sweetness…low acidity high polyphenols.
