Expertly cured lamb loin. The texture is buttery and smooth, with a slight gamy flavour, typical of lamb.

We say "prosciuttello" because it's a cured muscle, rather than "prosciutto", which refers to only the hind leg. 

Our salumi are dairy free and gluten free. A whole Lamb Prosciuttello is approximately 250g - 300g  .
