His Bolognese sauce is made in house in the classic Italian tradition. A combination of ground pork and ground beef are added to his famous tomato sauce and then slowly cooked with celery, carrots, and onions resulting in a meaty and flavourful sauce.
We source our beef from Artisan Farms which operates under strict protocols of sustainability with animal welfare of the highest importance. Devoted to farming since 1902, utilizing only heritage breeds, growing its own vegetarian feeds and offering stress-free natural pasture lands, Artisan Farms has developed stronger, healthier breeds that do not require the use of anti-biotics, added hormones or growth stimulants of any kind.
We use heritage pork raised by Mennonite farmers and fed a natural diet without antibiotics or hormones. Our pork is sourced from Bachert Meats in Walton, Ontario.
